1 1/2 lb large shrimp, peeled
1 bunch fresh asparagus, trimmed and washed
4 tbsp olive oil, divided
5 cloves garlic, minced
1 whole red onion, sliced
1/2 tbsp oregano
1/2 tbsp smoked paprika
1 tsp sea salt
1 tsp ground black pepper
1 whole lemon, juiced
1 cup black olives, pitted
1 cup feta cheese, crumbled
1/3 cup fresh cilantro or parsley, chopped


Instructions

Preheat oven to 450°F (232°C).
In a bowl, toss shrimp with 2 tbsp olive oil, garlic, lemon juice, oregano, smoked paprika, salt, and pepper. Let marinate for 5–10 minutes.
Place asparagus on a sheet pan and drizzle with 1 tbsp olive oil.
Arrange shrimp on top of the asparagus and scatter red onion slices evenly over everything.
Bake on the middle rack for 10 minutes, until shrimp are cooked through and edges are golden.
Remove from the oven and sprinkle with feta cheese, black olives, and fresh herbs.
Drizzle with the remaining olive oil and serve warm.
