Ingredients
4 boneless, skinless chicken thighs
1 can (14 oz) diced tomatoes, with juice
1 bell pepper, sliced
1 onion, sliced
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
1/2 cup vegetable broth (optional)
Fresh parsley, for garnish
Cooked pasta or polenta, for serving
Instructions
1. Place the chicken thighs in the slow cooker. Add the diced tomatoes with their juice, bell pepper, onion, garlic, oregano, basil, salt, pepper, and vegetable broth if using.
2. Stir everything together to combine well.
3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender.
4. Serve over cooked pasta or polenta and garnish with fresh parsley.
Notes
Use bone-in chicken thighs for extra flavor.
Vegetable broth can be replaced with chicken broth if preferred.
Store leftovers in an airtight container in the fridge for up to 3 days.
