Description

A hearty and healthy white bean turkey chili made with shredded turkey, cannellini beans, and flavorful spices. This gluten-free chili is perfect for a nutritious weeknight dinner.


Ingredients

1 tablespoon olive oil
2 tablespoons minced garlic
1 medium yellow onion, diced
1 cup chopped cilantro
34 cups shredded turkey
3 (14 oz) cans cannellini beans or white northern beans, drained and rinsed
1 (15 oz) can corn
2 (4.5 oz) cans diced green chiles
5 cups chicken broth
1 cup Greek yogurt
1/2 tablespoon cumin
1/2 tablespoon oregano
2 teaspoons chili powder
1 teaspoon paprika
Salt to taste
Pepper to taste
Optional toppings: cilantro, avocado, shredded cheese, jalapeños, green onion


Instructions

1. Heat the olive oil in a large stockpot over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3 to 5 minutes.
2. Stir in the chopped cilantro and cook for an additional minute.
3. Add the shredded turkey, beans, corn, diced green chiles, chicken broth, cumin, oregano, chili powder, paprika, salt, and pepper. Stir everything together, bring to a simmer, then reduce the heat to low and cover the pot.
4. Let the soup cook for 25 minutes.
5. Use a potato masher to gently mash some of the beans 3 to 4 times to help thicken the soup.
6. Allow it to simmer for 5 more minutes.
7. Remove the pot from the heat and stir in the Greek yogurt.
8. Serve the soup in bowls and garnish with your choice of optional toppings such as cilantro, avocado, shredded cheese, jalapeños, or green onion.

Notes

Use leftover shredded turkey for convenience.
Substitute plain yogurt for Greek yogurt if needed.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
For a spicier chili, add extra jalapeños or chili powder.
Garnish with fresh avocado to add creaminess without dairy alternatives.
