Description
This creamy and refreshing Avocado Green Goddess Dip blends fresh herbs, Greek yogurt, and avocado for a perfect veggie dip or snack.
Ingredients
1 cup Greek yogurt
4 ounces cream cheese, at room temperature
½ lemon, juiced
1 tablespoon olive oil
1 avocado
¼ cup green onions
1 shallot
2 cloves garlic
½ cucumber
1 tablespoon fresh dill, chopped
2 tablespoons fresh cilantro, chopped
¼ cup fresh basil, chopped
1 cup fresh spinach
1 teaspoon Himalayan pink salt (or regular salt)
1 teaspoon coarse black pepper
Mini peppers
Carrots, sliced
Bell peppers, sliced
Cucumbers, sliced
Pita chips
Cherry tomatoes
Instructions
Roughly chop the avocado, green onions, shallot, and garlic.
Peel the cucumber and grate it into a bowl lined with cheesecloth. Gather the cheesecloth around the cucumber and squeeze out the excess moisture, reserving 1 tablespoon of the cucumber juice.
Add the avocado, green onion, shallot, garlic, grated cucumber, dill, cilantro, basil, and spinach to a food processor or blender. Blend for 30 seconds until puréed, then transfer the mixture to a mixing bowl.
Next, add the Greek yogurt, cream cheese, lemon juice, reserved cucumber juice, salt, and pepper to the bowl. Use a whisk or hand mixer to blend everything together until smooth.
Drizzle olive oil over the top, sprinkle with a pinch of cracked black pepper, and serve alongside fresh veggies for dipping.
Notes
For a smoother texture, chill the dip for 30 minutes before serving. Substitute Greek yogurt with dairy-free yogurt for a vegan option.
