Homemade New Orleans beignets, fried to golden perfection and dusted with powdered sugar, perfect for a cozy breakfast treat.
Ingredients
¾ cup lukewarm water
1 1.25-ounce packet active dry yeast
½ cup evaporated milk
⅓ cup sugar
1 pinch salt
1 large egg
1 teaspoon vanilla extract
3¾-4 cups all-purpose flour
3 tablespoons butter, melted
Corn oil for frying
Powdered sugar for dusting
Instructions
Combine lukewarm water and yeast; let sit 5 minutes until frothy.
Whisk evaporated milk, sugar, salt, egg, and vanilla extract; add to yeast mixture.
Mix in 2 cups flour with mixer for 1-2 minutes.
Add melted butter; mix until dough is sticky and smooth.
Gradually add flour to form a soft dough.
Knead dough 1-2 minutes on floured surface.
Place dough in greased bowl; cover and let rise 2 hours until doubled.
Punch down dough and roll to ¼–⅓ inch thick.
Cut dough into 1½–2 inch squares; rest 10 minutes.
Heat oil; fry dough squares in batches until puffy and golden.
Drain on paper towels.
Dust immediately with powdered sugar and serve warm.
Notes
Use neutral oil if corn oil is unavailable.
Serve warm alongside café au lait or your favorite coffee.
Ensure oil temperature is moderate to avoid burning the beignets.
