Description

A delicious and wholesome baked oats recipe with rich cocoa and chocolate chips, perfect for a comforting breakfast.


Ingredients

2 cups old-fashioned oats
½ cup Dutch-processed cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
1¼ cups milk
⅓ cup maple syrup
2 large eggs
3 tablespoons melted coconut oil or butter
2 teaspoons pure vanilla extract
½ cup chocolate chips, plus extra for topping
Melted chocolate and flaky sea salt for topping (optional)


Instructions

Preheat the oven to 350°F. Grease an 8×8-inch baking pan with non-stick spray or line it with parchment paper and set aside.
In a large bowl, whisk together the oats, cocoa powder, baking powder, and salt.
Add the milk, maple syrup, eggs, melted coconut oil, and vanilla extract to the dry ingredients. Stir until the mixture is well combined and smooth.
Gently fold in the chocolate chips using a rubber spatula. Pour the mixture into the prepared baking pan and sprinkle extra chocolate chips on top.
Bake for 30 to 40 minutes, or until the center is set. Let the oats cool in the pan for a few minutes before serving.
If desired, melt additional chocolate chips or chopped chocolate and drizzle over the top of the oats. Finish with a sprinkle of flaky sea salt.

Notes

You can substitute milk with any plant-based alternative for a dairy-free version. Use coconut oil for a subtle tropical touch or butter for a richer flavor. Adding flaky sea salt enhances the chocolate flavor.
