Description
A creamy and flavorful Tuscan-inspired dish featuring butter beans cooked with garlic, sun-dried tomatoes, fresh spinach, and Parmesan cheese. Perfect to serve warm with crusty bread, rice, or pasta.
Ingredients
2 tablespoons unsalted butter (28 g)
4 cloves garlic, minced
½ teaspoon salt
½ teaspoon oregano
½ teaspoon crushed red pepper flakes
½ teaspoon smoked paprika
¼ teaspoon ground black pepper
½ cup sun-dried tomatoes, roughly chopped
½ to 1 cup vegetable broth (120 to 236 mL)
2 cans (15 ounces each) butter beans, drained (425 g cans)
1 cup chopped fresh spinach
1 cup heavy cream (can substitute half-and-half) (236 mL)
½ cup grated Parmesan cheese (50 g)
2 tablespoons chopped fresh basil
Instructions
Flavor Base: In a large sauté pan or pot over medium heat, melt 2 tablespoons of unsalted butter. Add the minced garlic along with ½ teaspoon each of salt, oregano, crushed red pepper flakes, smoked paprika, and ¼ teaspoon of ground black pepper. Cook for about 2 minutes, until the garlic becomes fragrant.
Add the Fillings: Stir in ½ cup of chopped sun-dried tomatoes, then add ½ to 1 cup of vegetable broth and the two drained cans of butter beans. Continue cooking uncovered over medium heat for 5 minutes.
Finish: Remove the pot from heat. Stir in 1 cup of chopped fresh spinach until it wilts. Then add 1 cup of heavy cream, ½ cup of grated Parmesan, and 2 tablespoons of chopped fresh basil. Serve the dish warm alongside crusty bread, over rice, or with pasta.
