Ingredients
1.5 cups quick-cooking grits
3 cups water
1 teaspoon Cajun spice
½ teaspoon sea salt (optional)
2 tablespoons chopped chives or scallions
1 cup marinara sauce
1 teaspoon Cajun spice
1 teaspoon lime juice
Optional garnish: chopped chives
1 cup shredded cheddar cheese
Vegetable oil for frying (about 2-3 cups)
Instructions
In a medium saucepan, combine grits, water, 1 teaspoon Cajun spice, and ½ teaspoon sea salt. Cook for 5 minutes, stirring constantly until thickened.
Stir in shredded cheddar cheese and chopped chives until well combined. Let cool about an hour until firm.
Form fritters by shaping 3 tablespoons of mixture into a ball, then flatten gently. Dip hands in cool water to prevent sticking.
Heat vegetable oil in a pan 1-2 inches deep to hot (test with toothpick bubbles).
Fry fritters in batches for 3-4 minutes per side until golden brown. Drain on paper towels.
Mix marinara sauce, Cajun spice, lime juice, and chopped chives for the sauce.
Serve fritters warm with the Cajun marinara sauce.
