Description
Juicy grilled chicken skewers marinated in herbs and served with refreshing tzatziki sauce made from Greek yogurt, cucumber, and dill.
Ingredients
1 lb chicken breast, cut into cubes
3 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
4 skewers
1 cup Greek yogurt
1 cucumber, grated
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
Salt to taste
Instructions
In a bowl, mix together the olive oil, lemon juice, garlic, oregano, salt, and pepper.
Add the chicken cubes to the marinade and let them sit for at least 30 minutes.
Thread the marinated chicken onto the skewers.
Grill the skewers over medium-high heat for 10-12 minutes, or until the chicken is fully cooked.
Meanwhile, in a separate bowl, combine the Greek yogurt, grated cucumber, dill, lemon juice, and salt to make the tzatziki sauce.
Serve the grilled chicken skewers alongside the tzatziki sauce.
Notes
For best results, marinate the chicken overnight.
Use fresh lemon juice for a brighter flavor.
Grate the cucumber finely to prevent a watery tzatziki sauce.
