A creamy and comforting chicken dish with mushrooms and mozzarella, perfect for a delicious dinner.
Ingredients
2 teaspoons extra-virgin olive oil
1 small onion, chopped
8 oz. white button mushrooms, sliced
2 cloves garlic, minced
1 ½ lbs. boneless, skinless chicken breast, cut into strips
¾ teaspoon kosher salt
½ teaspoon black pepper
4 oz. regular or reduced-fat plain cream cheese
¼ cup low-sodium chicken broth
¼ to ½ cup shredded mozzarella cheese
Instructions
Heat a large skillet over medium heat and add the olive oil.
Add the chopped onions and sliced mushrooms, sautéing for 4 to 5 minutes.
Then add the minced garlic and cook for an additional 30 seconds.
While the vegetables cook, slice the chicken into strips and season with the salt and pepper.
Turn the heat up to medium-high, then add the seasoned chicken strips to the skillet.
Cook for 6 to 8 minutes, turning once, until the chicken is golden brown on all sides.
Stir in the cream cheese and chicken broth, mixing until the cream cheese is completely melted and fully blended.
Sprinkle the shredded mozzarella evenly over the pan, cover, reduce the heat, and cook for another 2 to 3 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
Adjust seasoning with additional salt and pepper as needed.
Serve the chicken and mushrooms over steamed rice, garnished with parsley if desired.
Notes
Use plain cream cheese without any added alcohol or pork ingredients to keep it halal.
Serve with steamed rice or your preferred grain for a complete meal.
