Ingredients
2 tsp baking powder
1 tsp gingerbread spice
1 1/2 tsp vanilla extract
1/2 tsp salt
3 cups all-purpose flour
1 cup all-vegetable shortening
1 cup sugar
2-4 tbsp milk
1 large egg
1 oz cream cheese
1 tsp maple extract
2-3 cups powdered sugar
1 pinch salt
2 tbsp butter-flavored vegetable shortening
sprinkles (optional)
Instructions
Preheat oven to 350°F (175°C).
Whisk flour, baking powder, gingerbread spice, and salt in a medium bowl.
Cream shortening and sugar with an electric mixer until light and fluffy, about 3 minutes.
Add egg, 2 tbsp milk, and vanilla, mix until combined.
Gradually add flour mixture, dough will be crumbly; add extra milk if too dry.
Divide dough in half, roll out 1/2 inch thick on floured board.
Cut out shapes with cookie cutters, place 2 inches apart on baking sheet.
Bake 6-8 minutes until edges brown.
Cool completely on baking sheet.
Beat cream cheese and butter-flavored shortening until fluffy.
Add maple extract and pinch of salt.
Gradually beat in sifted powdered sugar until smooth.
Dip cooled cookies in glaze, place on cooling rack.
Decorate with sprinkles if desired.
Let glaze set 15-25 minutes.
