Description
Enjoy a fresh and flavorful greek chicken bowl packed with tender marinated chicken, crisp veggies, and creamy tzatziki sauce.
Ingredients
1 1/4 lb small chicken breasts (about 4 pieces)
1/4 cup olive oil
2 tablespoons honey
2 tablespoons lemon juice
1 1/2 teaspoons dried oregano
1 tablespoon lemon zest
1 1/2 teaspoons dried basil
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon red pepper flakes (optional)
1/4 teaspoon black pepper
4 cups romaine lettuce, shredded
2 cups cherry tomatoes, halved
2 cups cucumber, diced
2 cups cooked white rice
1 cup red onion, thinly sliced
1/2 cup feta cheese (optional)
1 cup plain Greek yogurt or low-fat sour cream
1/2 cup cucumber, grated
1 tablespoon fresh dill, finely chopped
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon minced garlic
1/4 teaspoon salt
Instructions
Whisk together all chicken marinade ingredients until combined.
Pound chicken breasts to 1/2 inch thick, place in a shallow dish or bag, and pour marinade over.
Marinate for at least 30 minutes or up to several hours.
Mix tzatziki sauce ingredients and set aside.
Prepare rice and chop vegetables.
Preheat air fryer to 380°F. Cook chicken 7 minutes one side, flip and cook 3 to 4 more minutes until 165°F internal temp.
Alternatively, cook chicken in skillet over medium-low heat 7-8 minutes per side until golden and cooked through.
Let chicken rest 5 minutes, then slice.
Assemble bowls with rice, lettuce, tomatoes, cucumber, red onion, sliced chicken, and tzatziki sauce.
Sprinkle with feta cheese if desired.
Drizzle with olive oil and lemon juice or lemon tahini dressing for extra flavor.
Serve and enjoy fresh chicken bowls.
Notes
Marinating chicken longer enhances flavor.
Use either Greek yogurt or low-fat sour cream for tzatziki.
Adjust red pepper flakes for preferred spice level.
Feta cheese is optional but adds a tangy finish.
