Description

This Instant Pot Zuppa Toscana delivers a hearty and comforting soup packed with Italian sausage, crispy bacon, tender potatoes, and vibrant kale.


Ingredients

Scale

5 strips thick-cut halal turkey bacon, cut into small pieces
1 pound halal Italian sausage, crumbled
5 cloves garlic, minced
1 medium onion, chopped
2 cups chicken broth
4 cups water
4 medium to large red potatoes, roughly diced (with skins on)
1/4 teaspoon Italian seasoning
1 cup heavy or whipping cream
1 small bunch of kale, torn into bite-sized pieces (stems removed)
Salt and pepper to taste


Instructions

Cut the bacon into small pieces and place them in your Instant Pot. Press sauté and fry the bacon for about 5 minutes to crisp.
Add the crumbled halal Italian sausage, breaking it up as it cooks. Brown the sausage and bacon until crispy.
While cooking, chop the onion and potatoes, stirring occasionally.
Add minced garlic and chopped onion; cook for about 1 minute.
Pour in chicken broth and water, scraping the bottom to release browned bits.
Add diced potatoes and Italian seasoning; stir to combine.
Close the lid, set valve to sealing, and cook on high pressure for 8 minutes (about 10 minutes to reach pressure).
Quick release pressure and carefully remove the lid.
Stir in heavy cream and torn kale, close the lid, and keep warm for 5 minutes to wilt kale.
Season with salt and pepper to taste. Serve immediately.

Notes

Use halal turkey bacon and halal Italian sausage to keep the recipe halal.
Be careful when quick releasing pressure.
Letting the kale wilt adds a fresh texture to the soup.
