Ingredients
1 tablespoon olive oil
1/2 medium onion, chopped
4 cloves garlic, minced
4 sticks celery, chopped
3 large carrots, peeled and sliced
1.5 pounds baby potatoes, halved
4 cups chicken or vegetable broth
2 cups water
1/2 teaspoon Italian seasoning
2 cups cooked turkey meat, or more to taste
1/2 cup heavy or whipping cream
Salt and pepper to taste
Instructions
Heat the olive oil in a large pot over medium-high heat. Add the chopped onion and sauté until it turns lightly browned, about 5 to 7 minutes.
Stir in the minced garlic and cook until fragrant, approximately 30 seconds.
Add the celery, carrots, halved potatoes, broth, water, and Italian seasoning to the pot. Increase the heat to high and bring everything to a gentle boil. Then reduce the heat to medium-low, partially cover the pot, and let it simmer for 10 minutes.
Add the cooked turkey meat and continue to simmer the soup for an additional 10 minutes or until the flavors meld.
Stir in the cream and season with salt and pepper to your liking. Serve warm.
Notes
Use either chicken or vegetable broth based on your preference.
Adjust the amount of turkey to suit your taste.
For a lighter option, substitute cream with coconut milk or a dairy-free alternative.
