Description
A simple and comforting side dish of sweet potatoes glazed with a caramelized maple syrup mixture.
Ingredients
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon salt
Freshly ground pepper, to taste
1/3 cup pure maple syrup
2 tablespoons melted butter, cooled slightly
2.5 pounds sweet potatoes, peeled and cut into 1 1/2-inch pieces
Instructions
Preheat your oven to 400°F (200°C).
Spread the peeled and cut sweet potatoes evenly in a 9-by-13-inch baking dish.
In a small bowl, whisk together the pure maple syrup, melted butter, lemon juice, salt, and freshly ground pepper.
Pour the maple syrup glaze over the sweet potatoes.
Toss gently to coat all the pieces evenly.
Cover the dish with foil and bake for 15 minutes.
Remove the foil, stir the sweet potatoes, and continue baking uncovered.
Stir every 15 minutes until tender and beginning to brown, about 45 to 50 minutes.
Notes
The foil covering helps steam the potatoes initially, and removing it lets the glaze caramelize for deeper flavor.
