Description

A delicious sandwich featuring crispy turkey, smashed avocado, cranberry sauce, and Brie, layered between savory Parmesan mashed potato waffles.


Ingredients

1 1/2 cups leftover mashed potatoes
1 cup buttermilk
2 eggs
1/4 cup melted butter
4-5 sage leaves, minced
1 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup grated Parmesan cheese
Leftover turkey, enough for 4 triangles
1 tablespoon butter
1 avocado, lightly mashed
Salt and pepper to taste
4 ounces Brie cheese, sliced
Leftover cranberry sauce
4 eggs cooked to your liking (optional)


Instructions

Whisk together mashed potatoes, buttermilk, eggs, and melted butter until smooth. Stir in minced sage.
Add flour, baking soda, and baking powder; stir until combined. Fold in Parmesan cheese.
Preheat and grease waffle iron. Cook batter in batches to preferred doneness.
Heat butter in skillet over medium heat, cook turkey until crispy about 5 minutes. Remove from heat.
Lightly mash avocado with salt and pepper.
Preheat oven to 425°F. Line baking sheet with parchment and arrange waffles.
Spread avocado on four waffles. Top with Brie slices, warm turkey, cranberry sauce.
Place Brie slices on remaining waffles as tops.
Bake 5 minutes until Brie begins to melt.
While baking, cook eggs as desired.
Remove waffles, place egg on avocado waffle, cover with Brie waffle to form sandwich. Press gently and serve.

Notes

Omit bacon to keep recipe halal. Use turkey for protein. Handle sandwiches carefully as they can be messy. Using a fork is recommended for eating.
