Quick and refreshing Mediterranean tostadas topped with a vibrant cucumber and tomato salad, hummus, and tahini drizzle. Perfect for a wholesome lunch.
Ingredients
1 1/2 cups chopped cucumber
1 cup chopped cherry tomatoes
1/2 cup chopped green olives
1/4 cup diced shallot or red onion
1/4 cup chopped parsley
1 tablespoon olive oil
Juice of 1/2 a lemon
Salt and pepper to taste
6 corn tortillas
1/2 cup hummus
Tahini
Instructions
Combine cucumbers, cherry tomatoes, green olives, shallots, and parsley in a mixing bowl.
Whisk olive oil, lemon juice, salt, and pepper together, then pour over salad and toss well.
Toast corn tortillas until golden and crisp.
Spread about 2 tablespoons of hummus on each tortilla.
Top each with about 1/4 cup of salad.
Drizzle with tahini and serve immediately.
