Delicious mini beef wellington bites with tender beef tenderloin, savory mushroom duxelles, and golden puff pastry perfect for appetizers or snacks.


Ingredients

1 pound beef tenderloin (or filet mignon, cut into small cubes)
1 tablespoon olive oil
1 cup mushrooms (finely chopped, such as cremini or button)
2 tablespoons shallots (finely chopped)
2 cloves garlic (minced)
1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
Salt and pepper (to taste)
1 package puff pastry (thawed)
1 egg (beaten, for egg wash)
1 tablespoon Dijon mustard (optional, for added flavor)
Flour (for dusting)


Instructions

Sear the Beef: Heat the olive oil in a skillet over medium-high heat. Season the beef with salt and pepper, then sear it for 2-3 minutes on each side. Remove from heat and allow to cool.
Prepare the Mushroom Duxelles: Using the same skillet, add the mushrooms, shallots, and garlic. Cook until the mushrooms turn golden brown, about 5-7 minutes. Stir in the thyme, season with salt and pepper, and set aside to cool.
Roll Out the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheets to approximately 1/8 inch thickness. Cut into 3×3 inch squares.
Assemble the Bites: Spoon some mushroom duxelles onto each pastry square, add a piece of beef, then fold the pastry over, sealing the edges by pressing with a fork.
Egg Wash and Bake: Preheat the oven to 400°F (200°C). Arrange the bites on a baking sheet, brush with the beaten egg, and bake for 15-20 minutes until golden brown.
Serve and Enjoy: Allow the bites to cool slightly before serving. They are best enjoyed warm.
