Ingredients
For the Crust:
1/2 cup pistachios, finely chopped
1/4 cup feta cheese, crumbled
1/4 cup Parmesan cheese, grated
1/2 cup breadcrumbs
2 tbsp butter, melted
For the Filling:
2 cups mushrooms, finely chopped
1 tbsp olive oil
2 garlic cloves, minced
16 oz cream cheese, softened
1/2 cup sour cream
2 eggs
1/4 cup Parmesan cheese, grated
Salt and pepper to taste
Fresh thyme for garnish
Instructions
Preheat Oven and Prepare Crust:
Set your oven to 350°F (175°C). Mix pistachios, feta, Parmesan, breadcrumbs, and melted butter in a bowl. Press into bottom of springform pan. Bake 10 minutes until golden and firm. Remove and set aside.
Cook Mushroom Filling:
Heat olive oil over medium heat. Add mushrooms and garlic, sauté until softened and moisture evaporated, about 5 to 7 minutes. Cool slightly.
Combine Filling Ingredients:
Beat cream cheese, sour cream, eggs, and Parmesan until smooth. Fold in mushroom mixture. Season with salt and pepper.
Bake the Cheesecake:
Pour filling over crust and smooth surface. Bake 35 to 40 minutes until set and lightly golden.
Cool, Garnish, and Serve:
Cool 10 minutes. Garnish with fresh thyme and chopped pistachios. Serve warm or at room temperature.
