Description

Delicious soft and slightly gooey red velvet crinkle cookies coated in a sweet sugar shell.


Ingredients

1/2 cup unsalted butter, softened
3/4 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs, at room temperature
2 teaspoons vanilla extract
1/2 teaspoon professional red food coloring
2 cups all-purpose flour
1/3 cup cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon salt

For the coating:
1/2 cup granulated sugar
1/2 cup powdered sugar


Instructions

Preheat your oven to 350°F and line a baking sheet with parchment paper. Set aside.
In a large bowl, cream the butter, brown sugar, and granulated sugar together until light and fluffy. Scrape down the sides of the bowl, then add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and red food coloring until fully combined.
In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and beat until just combined.
Place the granulated sugar in one bowl and the powdered sugar in another. Using a 1-ounce cookie scoop or a tablespoon, scoop out the dough and roll each portion first in the granulated sugar, then in the powdered sugar, ensuring each cookie ball is fully coated. Arrange the coated cookie balls on the prepared baking sheet, spacing them about an inch apart.
Bake for 10 minutes, or until the cookies have puffed and cracked but remain slightly gooey in the center.
Allow the cookies to cool, then enjoy them with a glass of milk.

Notes

Make sure eggs are at room temperature for better mixing.
Do not overbake to keep the centers soft and gooey.
Use parchment paper for easy cookie removal.
