Delicious savory spinach egg and cheese brownies, perfect for a wholesome breakfast or snack.
Ingredients
4 large eggs
2 cups cottage cheese (small curd, 4% milkfat)
1 cup all-purpose flour
4 cups fresh baby spinach leaves, packed
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1 teaspoon baking powder
2 tablespoons olive oil
1 1/2 cups shredded white cheddar cheese (reserve 1/2 cup for topping)
3 tablespoons grated Parmesan cheese (optional)
Chives (optional, for garnish)
Instructions
Preheat oven to 350°F. Grease a 9×9-inch pan or line with parchment paper.
In a large bowl, whisk eggs, cottage cheese, and olive oil until smooth.
Add flour, salt, pepper, garlic powder, and baking powder; fold gently until just combined.
Fold in the spinach leaves and 1 cup shredded cheddar cheese carefully.
Spread mixture evenly in prepared pan. Sprinkle reserved cheddar and Parmesan on top.
Bake for 35 to 40 minutes until golden on top and set in the center.
Cool for 20 minutes before slicing into 9 bars. Garnish with chives if desired.
Store leftovers airtight in refrigerator for up to 4 days or freeze up to 2 months. Thaw in fridge before reheating.
Notes
Use fresh spinach leaves for best texture. Parmesan topping is optional but adds a golden crust. Great served warm or at room temperature.
