Ingredients
2 medium sweet potatoes, peeled and cubed
1/4 cup mini marshmallows
1/4 cup chopped pecans
2 tablespoons brown sugar
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, toss the sweet potato cubes with olive oil, brown sugar, salt, and pepper until evenly coated.
Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender.
Remove from the oven and sprinkle the marshmallows and chopped pecans evenly over the sweet potatoes.
Return the dish to the oven and bake until the marshmallows are melted and toasted.
