Description

A hearty and comforting Texas Cowboy Stew filled with ground beef, smoked sausage, bacon, beans, corn, and potatoes simmered to perfection.


Ingredients

1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 package (14 ounces) halal smoked sausage, sliced
4 slices cooked turkey bacon, crumbled
3 medium potatoes, peeled and diced
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn kernels, drained
1 can (15 ounces) diced tomatoes
2 ½ cups beef broth
2 teaspoons chili powder
1 teaspoon cumin
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon pepper
1 cup shredded cheddar cheese, optional


Instructions

In a large pot or Dutch oven, cook the ground beef, chopped onion, and minced garlic over medium heat until the beef is browned. Drain any excess fat.
Add the sliced halal smoked sausage and crumbled turkey bacon to the pot. Stir and cook for a few minutes until the sausage is heated through.
Add the diced potatoes and stir to combine.
Mix in the kidney beans, black beans, corn, and diced tomatoes with their juice.
Pour in the beef broth and add chili powder, cumin, smoked paprika, salt, and pepper. Stir all ingredients well.
Bring the mixture to a simmer. Lower the heat to low, cover, and simmer for 20 to 25 minutes, or until the potatoes are tender and the flavors have blended.
If desired, stir in the shredded cheddar cheese before serving.
Serve and enjoy!

Notes

Use halal smoked sausage and substitute turkey bacon for a halal-friendly version.
Shredded cheddar cheese can be added for extra richness but is optional.
