Ingredients
200g Authentic Greek yogurt 10%
Salt
1/2 teaspoon smoked paprika
1/2 teaspoon dried mint
3 sprigs of chopped parsley
5 zucchinis of varying sizes
1 tablespoon olive oil
Sautéed white sesame seeds and black currants
Instructions
Slice the zucchinis thickly and arrange them on a baking sheet.
Brush them with olive oil, sprinkle with salt, and bake in a preheated oven for 15 to 20 minutes until they turn golden brown.
Meanwhile, in a bowl, combine the authentic Greek yogurt with smoked paprika, chopped parsley, salt, and dried mint.
Transfer the yogurt mixture into a piping bag.
Once the zucchini slices have cooled, begin assembling the layers: start with a zucchini base, then alternate between layers of the yogurt mixture and zucchini slices.
Secure the top with a star-shaped toothpick and garnish by sprinkling sautéed white sesame seeds and black currants.
